After fermentation with lactobacillus and a clean saison yeast strain we aged this beer for 3 months in ex-red wine barrels before blending onto British raspberries. We used 300 g/l of raspberries in this beer and let them rest for nearly two months. Bright and zippy freshly squeezed raspberry is the overwhelming first impression from this beer. Clean tartness and a subtle bitterness mingle with the vanilla barrel character leading to a gentle, refreshing finish.

This beer is an exercise in subtlety. A clean, softly acidic Saison base mingles with subtle wood character achieved through short barrel contact time. A large addition of peach and apricot, cold steeped, brings apricot marmalade and honeysuckle delicacy and peach cobbler with a soft, refreshing finish.
